I’m celebrating my Mystic Krewe of Nyx haul with an indulgent egg recipe. The golden baked cheese gives way to creamy egg and subtle heat of the hot sauce. Yummy!
1 tablespoon butter, softened
2 tablespoons fine ground bread crumbs
2 large eggs
salt and black pepper to taste
Sriracha, Crystal or other hot sauce
2 tablespoons cream or half and half
2 tablespoons Gruyere, grated
Preheat oven to 350 degrees F. Liberally butter two ramekins. Distribute the bread crumbs evenly around the sides and bottom of them. Crack one egg into each cup, taking care not to break the yolk. Sprinkle each egg with salt, pepper and a dash of pepper sauce. Put a tablespoon of cream and sprinkle a tablespoon of Gruyere over the top of each cup. Bake until the the whites are set and yolks are as firm as you like, checking at 8, 10 and 12 minutes. Time varies depend on your oven and how you like your eggs.
